Despite the rain in Manchester, clear skies met us in Llanfairfechan when we arrived early in the morning to prepare the hog roast Llanfairfechan meal for 120 people at a Tipi wedding, bounded by the Irish Sea and the foothills of the Welsh Mountains. We used a Platinum machine to roast a Hog roast Llanfairfechan on the top shelf, and joints of Welsh Lamb, Beef Brisket and (later on) Chickens at the lower level … quite a site to behold and the smell was amazing. Canapes including mini Duck rolls and bite size Pizzas were served to the guests on Welsh Slate platters, and our staff helped by preparing and serving reception drinks. After the speeches (Bangor for two weeks!) we manned our buffet positions, and tables were invited up to choose from the selection of freshly made salads including Caesar and Tomato and Mozzarella, Spicy wedges and New Potatoes in a Chive butter, as well as their choice of meats. We served the delicious wedding cake (made by an aunt of the Bride) as dessert, dressed with a raspberry coulis, whipped cream and fresh Raspberries. The made was made even more perfect for the happy couple when Wales defeated Northern Ireland in the Euros!
